Ash plantain dishes are very popular all around the world specially Asian and African regions. Ash plantain is one of the special member of plantain family, rich with vitamin A and fibre, special used for cooking when they are raw.
Its easy to make curry with coconut milk, or fry. And perfect with rice and roti.
Fresh grated coconut (to wash ash plantain)
1 tsp curry powder
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1/4 tsp fenugreek seeds (uluhal)
1 tbs Maldive fish pieces
1 cup of lite coconut milk
1 cup coconut milk
Curry leaves, Rampe
4-5 green chillies, chopped
5 cloves of garlic, chopped
1 red onion, chopped
Cinnamon stick
Salt to taste

Ingredients
500g Ash plantains (Alu Kehel)Fresh grated coconut (to wash ash plantain)
1 tsp curry powder
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1/4 tsp fenugreek seeds (uluhal)
1 tbs Maldive fish pieces
1 cup of lite coconut milk
1 cup coconut milk
Curry leaves, Rampe
4-5 green chillies, chopped
5 cloves of garlic, chopped
1 red onion, chopped
Cinnamon stick
Salt to taste
INSTRUCTIONS
Take the ash plantains and Peel off and cut them into pieces.
Now add grated coconut and some water. mix them properly using bare hand and wash to avoid turning brown.
Put the ash plantain in a saucepan.
Add curry leaves, Pandan leaves, green chilli, garlic, onion, and cinnamon stick
Now add salt, curry powder, turmeric powder, red chilli powder, fenugreek seeds, Maldive fish and lite coconut milk.
Now place the cooking pot on the stove and Cover and cook for 10 minutes , stirring occasionally.
Now, mash the ash plantains using a spoon to check whether it's cooked enough or not. When the plantain is cooked add the thick coconut milk.
Give a good mix, cooked for another 5 minutes without closing the lid.
Check the seasoning, and adjust salt if needed.
Then remove from the fire.
This is how to make the ash plantain curry with coconut milk. Serve and enjoy this delicious ash plantain curry with boiled rice or roti.
