Health benefits of the Jack fruit seeds
- A rich source of nutrition
- high in protein and carbohydrates
- Its rich with number of vitamins
This recipe is not easy to make. Only few can make it properly.
Ingredients.
Jack fruit seeds - 50Coconut - freshly grated
Curry powder - 1 ½ tsp,
Pepper - ½ tsp, ground
Large onions - 1
Garlic 3-4 pcs
Curry leaf
Pandan leaf - 1 inch piece
Green chilies - 3
Light coconut milk - 2 cups
Thick coconut milk - 3 cups
Chili powder - 2 tsp,
Rice - 2 tbsps, raw
Fenugreek seeds - ½ tsp,
Turmeric powder - ½ tsp
Coconut oil 2 tsp
Mustard seeds 1 tsp
Salt to taste.
How to prepare jack fruit seed curry properly.
Clean the jack fruit seeds well with water.
Boil the seeds in a pot around 20 minutes
Slice the onion and garlic.
When its crumble like texture take off the pan and keep seeds aside until seeds get cooled.
When they are cooled smash them slightly.
Roast the coconut, chilli powder, curry powder, fenugreek and the rice until get browned and grind together.
Heat some oil in a clay pot and add onion, garlic, pandan leaves and mustard seeds and fry them until golden brown.
Turn down the heat and add spicy mix and fry them with low heat. Now add build jack fruit seeds and mix well.
Then add light coconut milk and cooked for few minutes.
Now add thick coconut milk with salt, turmeric powder and some fenugreek seeds and cook for another 10-15 minutes.
