Sri Lankan Devilled Chicken Restaurant style by ape rasa 


Ingredients:

2 Kg Chicken Cut in to small pcs (with bones gives better taste)



Three Onion cut in to cubes



Three tomato cut in to cubes


One pepper sliced


Few Pandan leaves, curry leaves, Cardamom and cinnamon,1 tsp of chili flakes, 2 tsp of black pepper,salt to taste,1 tsp of turmeric powder.
1 1/2 tsp of chili powder (You can add more or less according to your taste )


4-5 garlic cloves and 1 inch of ginger chopped





100g of leeks cut in to pieces


3 tbsp of tomato sauce




1- 1 1/2 cups of vegetable oil to deep fry chicken


To make the devilled chicken



 Put a  large frying pan on the heat. Add 2 tablespoons of oil. When oil is hot, add the garlic and ginger paste. Stir with a  spoon.Add the chilli, sauces, pandan leaves, curry leaves,Cardamom and cinnamon Keep stirring. Now its time to add the chicken pieces and mix well.
After chicken mix well with the red mixture add onion, tomatoes, pepper and leeks. Taste for balance and add bit more chilli sauce. Remove from the heat and let it rest for a minute. Enjoy!
